Form patty
Place 0.25 lb ground beef in a small bowl. Sprinkle 0.125 tsp salt and 0.0625 tsp black pepper over the meat. Gently mix once or twice with your hands until seasonings are evenly distributed; do not overwork. Form into a 3-inch wide, 1/2-inch thick patty with a slight depression in the center to prevent doming while cooking.
Cook patty
Heat a nonstick skillet or griddle over medium heat (about 350°F/175°C). If desired, add a light spray of oil to the pan. Place the patty in the hot skillet and cook 2.5–3 minutes on the first side without pressing. Flip and cook 2–2.5 minutes on the second side for medium doneness (adjust time for personal preference). In the last 30 seconds of cooking, place the cheddar slice on top of the patty and cover the pan briefly to melt the cheese.
Fries
Prepare potato
Wash and dry 1/2 medium russet potato. Using a knife or mandoline, cut into 1/4-inch thick sticks to yield a small handful of fries appropriate for a kid's portion (about 1 to 1 1/2 cups raw). Rinse the cut fries briefly under cold water to remove excess starch, then pat completely dry with paper towels.
Cook fries (oven method, recommended for kids)
Preheat oven to 425°F (220°C). Toss the dried potato sticks with 1 tbsp vegetable oil and 0.25 tsp salt in a small bowl to coat evenly. Spread in a single layer on a small rimmed baking sheet lined with parchment. Roast 12–15 minutes, turning once at about 7 minutes, until golden and crisp at the edges. Let cool slightly before serving.
Alternate fry method (pan-fry)
If you prefer stovetop, heat 1 tbsp vegetable oil in a small skillet over medium-high heat. Add the potato sticks in a single layer (cook in batches if needed) and fry 6–8 minutes, stirring occasionally, until browned and tender. Drain on paper towels and sprinkle with the 0.25 tsp salt.
