Blackened Shrimp

Prepare Shrimp

Pat shrimp dry with paper towels. Place in a bowl and drizzle with 2 tbs olive oil; toss to coat evenly.

Make Blackening Spice

In a small bowl combine paprika, smoked paprika, garlic powder, onion powder, dried oregano, dried thyme, cayenne pepper, black pepper, and kosher salt. Mix thoroughly.

Season Shrimp

Sprinkle the blackening spice over the oiled shrimp and toss until each shrimp is evenly coated.

Cook Shrimp

Heat a large heavy skillet or cast-iron pan over medium-high heat until very hot (about 2–3 minutes). Add 1 tbs butter (or 1 tbs olive oil if preferred). Add shrimp in a single layer without crowding; cook 1–2 minutes per side until blackened at the edges and just cooked through (opaque and firm). Work in batches if necessary.

Finish

Remove shrimp to a plate and squeeze a little lemon juice over them. Keep warm while you assemble the salad.

Caesar Dressing

Combine Anchovy and Garlic

In a medium bowl mash the minced anchovy fillets with the minced garlic using the back of a spoon or a small whisk until paste-like.

Emulsify Dressing

Add mayonnaise, Dijon mustard, lemon juice, red wine vinegar, Worcestershire sauce, grated Parmesan, salt, and black pepper to the anchovy-garlic mixture. Whisk until smooth. Slowly whisk in 2 tbs olive oil to slightly loosen and emulsify the dressing. Taste and adjust seasoning with more lemon or salt if desired.

Chill

Cover and refrigerate the dressing for at least 10 minutes to let flavors meld. If it thickens too much, whisk in a little water, 1 tsp at a time, to reach desired consistency.

Salad Assembly

Prepare Romaine

Place the chopped romaine in a large bowl. If using whole leaves, tear them into bite-sized pieces, then dry thoroughly so dressing adheres.

Dress the Salad

Add about 3/4 of the dressing to the romaine (start with 3–4 tbs and add more to taste). Toss gently but thoroughly until leaves are evenly coated.

Add Cheese and Croutons

Add 3/4 cup of the grated Parmesan and the croutons to the dressed romaine. Toss lightly to combine.

Top with Shrimp

Divide the dressed romaine among 4 plates (or place on a single platter). Arrange 6 blackened shrimp on each portion.

Finish and Serve

Sprinkle remaining Parmesan over each salad, add additional cracked black pepper to taste, and serve with lemon wedges on the side. Offer extra dressing on the side if desired.
