Prepare Ravioli Dough

Make the Dough

In a large bowl, combine flour and salt. Make a well in the center and add eggs and olive oil. Mix until a dough forms. Knead on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

Prepare Crab Filling

Make the Filling

In a mixing bowl, combine the crab meat, ricotta, Parmesan, chives, lemon juice, salt, and pepper. Mix until well combined.

Assemble Ravioli

Fill the Ravioli

Roll out the dough into thin sheets. Cut out circles or squares. Place a small amount of crab filling in the center of each piece. Moisten the edges with water, fold, and seal tightly.

Cook Ravioli

Boil the Ravioli

Bring a large pot of salted water to a boil. Cook the ravioli in batches for about 4-5 minutes until they float. Remove with a slotted spoon and set aside.

Cook Beef

Sear the Beef

Season the filet mignon with salt and pepper. Heat olive oil in a skillet over medium-high heat. Add garlic and rosemary, then add the steaks. Cook for about 4-5 minutes per side for medium-rare. Remove from skillet and let rest.

Make the Sauce

In the same skillet, melt butter and add lemon juice and parsley. Stir to combine and pour over cooked ravioli and beef before serving.

Arrange ravioli on a plate, top with sliced beef, and drizzle with sauce if desired. Serve immediately.
