Pork Preparation
Marinate the Pork
In a bowl, combine the chopped Anaheim chili peppers, minced garlic, cumin, paprika, olive oil, salt, and black pepper. Rub this mixture all over the pork shoulder and let it marinate for at least 2 hours, preferably overnight in the refrigerator.
Cook the Pork
Preheat your oven to 300°F (150°C). Place the marinated pork shoulder in a roasting pan and cover it with aluminum foil. Roast in the oven for about 4-5 hours or until the meat is tender and easily pulls apart.
Peanut Sauce Preparation
Make the Peanut Sauce
In a mixing bowl, whisk together the peanut butter, soy sauce, lime juice, honey, water, and chili garlic sauce until smooth. Adjust the consistency with more water if necessary.
Serving
Serve the Dish
Once the pork is cooked, let it rest for 15 minutes before shredding. Serve the pulled pork with the peanut sauce drizzled on top.
