Prepare the Duck

Score the skin of the duck breast in a crosshatch pattern, making sure not to cut into the meat. Season both sides with salt and black pepper.

Cook the Duck

Heat a skillet over medium heat. Place the duck breast skin-side down in the skillet and cook for about 6-8 minutes, or until the skin is crispy and golden. Flip the duck and cook for another 4-5 minutes for medium rare. Remove from the skillet and let rest.

Sauté the Mushrooms

In the same skillet, add olive oil and minced garlic. Sauté for about 1 minute until fragrant. Add the mushrooms and cook for about 5-7 minutes until tender. Season with soy sauce and sesame oil. Stir to combine.

Sauté the Choy

If using baby choy, cut in half; if using bok choy, chop into bite-sized pieces. Add to the skillet with the mushrooms and sauté for an additional 3-4 minutes until the choy is wilted and tender.

Serve

Slice the duck breast and serve it on a plate alongside the sautéed mushrooms and choy. Enjoy!
