Preparing the Lumpia
Make the Filling
In a large bowl, combine ground pork, shredded carrots, chopped green onions, minced garlic, soy sauce, black pepper, and beaten egg. Mix well until all ingredients are combined.
Wrap the Lumpia
Take a lumpia wrapper and place about 2 tablespoons of the filling in the center. Fold the sides over and roll tightly. Seal the edge with a little water. Repeat with the remaining wrappers and filling.
Fry the Lumpia
Heat oil in a deep frying pan over medium heat. Fry the lumpia in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
Making the Sweet and Sour Sauce
Combine Ingredients
In a saucepan, mix ketchup, white vinegar, brown sugar, soy sauce, pineapple juice, cornstarch, and water. Stir until well combined.
Cook the Sauce
Heat the saucepan over medium heat, stirring continuously until the sauce thickens and becomes glossy, about 5-7 minutes. Remove from heat.
