Prepare the Ingredients

Peel and shred the green papaya. Finely chop the garlic and onion.

Sauté the Aromatics

In a large pot, heat the oil over medium heat. Add the chopped onions and sauté until translucent. Then add the garlic and cook until fragrant.

Cook the Papaya

Add the shredded green papaya to the pot and stir well. Cook for about 5-7 minutes until it softens slightly.

Add the Sauces

Pour in the soy sauce and vinegar, then add the bay leaves and black peppercorns. Mix everything well.

Simmer

Add water and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for about 30 minutes, stirring occasionally.

Season

Taste and adjust seasoning with salt as needed. If the mixture is too dry, add more water.

Serve

Once the papaya is tender and the flavors have melded together, remove from heat and serve warm with rice.
