Preheat your grill or oven to medium-high heat. Season the sablefish fillets with olive oil, salt, and black pepper.

Cook the Sablefish

Grill or bake the sablefish for about 5-7 minutes on each side, or until it flakes easily with a fork.

Making the Romesco Sauce

Blend the Ingredients

In a blender, combine roasted red peppers, toasted almonds, garlic, red wine vinegar, smoked paprika, olive oil, and salt. Blend until smooth.

Preparing the Cilantro Aioli

Mix the Aioli

In a bowl, combine mayonnaise, fresh cilantro, lemon juice, minced garlic, and salt. Mix until well combined.

Making the Anaheim Escabeche

Pickle the Peppers

In a saucepan, combine sliced Anaheim peppers, sliced red onion, white vinegar, water, salt, and sugar. Bring to a boil, then reduce heat and simmer for 10 minutes. Let it cool.
