Noodles & Broth
Soak and cook noodles
Bring 1.5 quarts of water to a rolling boil in a large pot. Add the sweet potato glass noodles and cook for 6–8 minutes until just tender (they should be slightly chewy). Stir occasionally so they don't clump. Drain the noodles in a colander and rinse under cold running water to stop cooking and remove starch. Shake off excess water.
Season and set aside
Transfer the drained noodles to a large bowl. Add 1 tablespoon sesame oil and 1 tablespoon light soy sauce; toss thoroughly so the noodles are lightly coated and won't stick. Set aside while you prepare other components.

Prep vegetables
Julienne the carrot into thin matchsticks to make 1 cup. Slice bell peppers into thin strips to make 1/2 cup each. Thinly slice onion to measure 1/2 cup. Clean and thinly slice shiitake mushrooms to make 1 cup. Rinse the spinach and trim any tough stems; pat dry or spin in a salad spinner.
Cook vegetables separately
Heat 1 teaspoon neutral oil in a large skillet or wok over medium-high heat. Add carrots and stir-fry 2 minutes until slightly tender; season lightly with a pinch of salt. Remove and set aside. Add another 1 teaspoon oil, stir-fry bell peppers 1–2 minutes until crisp-tender; remove and set aside. Add another 1 teaspoon oil if needed and stir-fry shiitake mushrooms 2–3 minutes until browned and fragrant; add half the minced garlic in the last 30 seconds, then remove and set aside. Quickly blanch spinach in boiling water 15–20 seconds until wilted, drain, squeeze out excess water, and roughly chop; season with a pinch of salt and a few drops of sesame oil, then set aside. Sauté the sliced onion in the pan for 1–2 minutes until translucent; remove and set aside with the other vegetables.
Combine aromatics
Reserve 1 teaspoon of minced garlic for the final toss. Thinly slice scallions and set aside for garnish.
Protein - Royal Style
Marinate beef
In a bowl, combine 1 tablespoon soy sauce, 1 teaspoon mirin (or cooking wine), 1/2 teaspoon sugar, and 1 teaspoon sesame oil. Add the thinly sliced beef (8 oz) and toss to coat. Let marinate 10–15 minutes at room temperature.
Cook beef
Heat a skillet over high heat until very hot. Add a light coating of oil, then add the marinated beef in a single layer. Cook quickly 1–2 minutes per side until seared but still tender. Remove and set aside.
Make egg ribbons (royal garnish)
Beat 2 large eggs lightly with a pinch of salt. Heat a small nonstick skillet over medium-low, add 1 teaspoon neutral oil and swirl. Pour a thin layer of egg to make a crepe-like omelet about 6 inches across; cook 30–40 seconds until set but not browned. Transfer to a cutting board, stack if making more than one, roll up tightly and slice into thin strips to create golden egg ribbons. Set aside for garnish.
Sauce & Tossing
Make the sauce
In a small bowl whisk together 3 tablespoons soy sauce, 1 tablespoon sugar, 1 teaspoon rice syrup or honey, 2 teaspoons sesame oil, and 1/2 teaspoon black pepper until sugar is dissolved.
Combine all components
Heat the large skillet or wok over medium-high heat. Add the seasoned noodles and pour the prepared sauce over them. Add the reserved vegetables (carrots, bell peppers, mushrooms, onion, spinach), the cooked beef, the remaining minced garlic, and 1–2 teaspoons neutral oil if the pan looks dry. Toss vigorously with tongs or two spatulas for 1–2 minutes until noodles are evenly coated and heated through. Taste and adjust: add up to 1 teaspoon additional soy sauce for saltiness or a pinch more sugar for balance.
Finish and garnish
Remove from heat. Drizzle optional 1/2 teaspoon olive or sesame oil for gloss. Sprinkle toasted sesame seeds and sliced scallions. Arrange the egg ribbons on top (the 'royal' garnish) and place the seared beef slices elegantly over the noodles.
Plating & Serve
Toss very gently once more to distribute garnishes, then transfer to a serving platter or individual bowls. Serve warm as a main dish. Leftovers keep in the refrigerator up to 2 days; reheat gently on a skillet with a splash of water or oil to loosen the noodles.
