Pork & Marinade
Prepare pork
If not pre-sliced, partially freeze the pork for 30–45 minutes, then slice thinly (1/8–1/4 inch) against the grain. Place sliced pork in a large bowl.
Make marinade
In a small bowl combine minced garlic, minced ginger, gochujang, gochugaru, soy sauce, rice wine, sesame oil, sugar, water (or stock), and black pepper. Whisk until sugar and gochujang are well incorporated.
Marinate pork
Pour the marinade over the sliced pork and mix thoroughly so all pieces are coated. Cover and refrigerate for at least 20 minutes, ideally 1 hour. You can marinate up to 6 hours for deeper flavor.
Vegetables & Stir-frying
Prep vegetables
While pork marinates, thinly slice the onion, julienne the carrot, cut green onions into 2-inch lengths, and slice cabbage if using. Keep vegetables ready to go because stir-frying is fast.
Heat pan
Heat a large skillet or wok over medium-high heat. Add 1 tablespoon vegetable oil and swirl to coat the surface.
Cook marinated pork
Add the marinated pork and its marinade to the pan in a single layer if possible. Spread and sear undisturbed for 30–45 seconds to develop some caramelization, then stir-fry 3–4 minutes until pork is cooked through and most of the marinade is reduced and glossy.
Add green onions and sesame
Turn off the heat, then stir in the green onions, toasted sesame seeds, and 1/2 teaspoon sesame oil. Toss to combine. Let rest 1 minute so flavors meld.
To Serve
Transfer Jeyuk Bokkeum to a serving plate or shallow bowl. Serve hot with steamed rice, lettuce leaves for wrapping, kimchi, and other banchan. Leftovers keep 2–3 days refrigerated in an airtight container and reheat gently in a skillet or microwave.
