Method

Prepare mussels

    Clean and check

    Rinse the mussels under cold running water. Scrub shells to remove debris and pull off any beards. Discard any mussels with cracked shells or that remain open when tapped.

    Pat mussels dry with paper towel and set aside in a single layer while you prepare the sauce.

Golden sauce and cook

    Warm aromatics

    Heat a medium skillet over medium heat and add the neutral oil and 1 tablespoon of butter. When butter melts and begins to foam, add the minced garlic, minced shallot, and grated ginger. Sauté, stirring constantly, for about 30–45 seconds until fragrant; do not brown.

    Bloom spices

    Add the turmeric powder and ground white pepper to the aromatics and stir for 10–15 seconds to bloom the spice, releasing color and fragrance.

    Add mussels

    Increase heat to medium-high. Add the cleaned mussels to the skillet, toss briefly to coat with the aromatic butter-turmeric mixture, then pour in the fish sauce and 1 tablespoon of water (or white wine if preferred) to create some steam.

    Steam open

    Cover the skillet with a tight-fitting lid and let the mussels steam for 3–5 minutes, shaking the pan once or twice. Check after 3 minutes — mussels are done when shells have opened. Discard any mussels that remain closed after 5 minutes.

    Finish sauce

    Remove the lid and reduce heat to medium-low. Add the remaining 0.5 tablespoon butter and the light cream. Stir gently to combine; the sauce should become glossy and coat the mussels. Cook uncovered for 30–60 seconds to thicken slightly.

    Adjust seasoning

    Stir in the lemon juice and taste the sauce. Add sea salt sparingly if needed (about 1/4 tsp) — fish sauce is salty, so adjust carefully.

    Turn off heat and sprinkle chopped cilantro and sliced scallion over the mussels. Give the pan a gentle toss to distribute garnish.

Serve

    Transfer the golden mussels to a shallow serving bowl, spooning the glossy turmeric sauce over them. Serve immediately with lemon wedges and toasted baguette or steamed rice to soak up the sauce.
