1. Bring water to boil
Place 4 cups of water and 1 tablespoon kosher salt in a medium saucepan. Bring to a rolling boil over high heat.
2. Cook edamame
Add 1 cup edamame (in pod) to the boiling water. Return to a boil, then reduce heat slightly to maintain a steady boil and cook for 3–5 minutes for fresh or 5–6 minutes for frozen, until pods are bright green and beans inside are tender when tested.
3. Drain and cool briefly
Drain the edamame in a colander and briefly run under cold water or shake for 10–20 seconds to stop cooking and cool enough to handle (you want them warm, not scalding).
4. Season
Transfer the warm edamame to a medium bowl. Drizzle 1 teaspoon neutral oil over the pods and toss to coat lightly (this helps salt and spices stick). Sprinkle 1 teaspoon flaky finishing salt (or to taste), 1 teaspoon freshly ground black pepper (optional), and 1/2 teaspoon chili flakes or togarashi (optional). Toss again to distribute evenly.
5. Serve
Transfer to a serving bowl, garnish with lemon or lime wedges if using. To eat: squeeze pod between teeth or thumb and pull the bean out with your teeth. Discard pods.
Alternative Broiled Finish (Optional)
6. Broil for charred flavor
After draining, place the warm, oiled, and lightly salted edamame in a single layer on a foil-lined baking sheet. Set your oven to Broil (high). Broil 2–3 inches from the heating element for 1–2 minutes, watching closely, until edges show light charring. Remove and immediately toss with finishing salt and spices.
