Heat oil
Pour vegetable oil into a heavy-bottomed skillet or Dutch oven to a depth of about 1/2 inch (roughly 1 cup). Heat over medium-high until oil reaches 350°F (175°C) or a small cube of bread sizzles and browns in about 30–40 seconds.
Prepare tots
Pat frozen tater tots dry with paper towels to remove excess frost. Season lightly with 1 tsp salt and 1 tsp black pepper, tossing gently to coat.
Fry in batches
Working in a single layer, carefully add the tater tots to the hot oil in batches (do not overcrowd). Fry 3–4 minutes, turning occasionally, until golden brown and crisp on all sides. Use a slotted spoon to transfer to a paper-towel-lined tray to drain. Repeat with remaining tots.
Finish and keep warm
If making ahead, keep cooked tots in a single layer on a baking sheet in a 200°F (95°C) oven to stay crisp while finishing remaining batches. Sprinkle with a pinch more salt to taste immediately after draining, if desired.
Dipping Sauce - Chipotle Ketchup
Combine ketchup, mayonnaise, 1 tsp adobo sauce, smoked paprika, lime juice, garlic powder, and 1/4 tsp salt in a small bowl. Whisk until smooth and taste; adjust heat by adding a bit more adobo sauce if desired. Refrigerate for at least 10 minutes to let flavors meld.
Garnish & Serve
Arrange hot tater tots on a serving platter. Sprinkle chopped chives and grated Parmesan (if using) over the tots. Serve immediately with the chipotle ketchup on the side for dipping.
