Prepare Jalapeños

Halve and seed

Wear gloves if desired. Rinse and dry the jalapeños. Slice each pepper lengthwise in half. Use a small spoon or melon baller to scrape out seeds and membranes to reduce heat, leaving the pepper halves intact.

Pat the hollowed jalapeño halves dry with paper towels to remove excess moisture so the filling adheres well.

Make Filling

Soften the cream cheese: let sit at room temperature for 15–20 minutes or microwave in 10-second bursts until easily stirrable (do not melt).

In a medium bowl, combine the softened cream cheese, shredded cheddar, cracked black pepper, garlic powder, smoked paprika, chopped cilantro or chives, and 1/2 tsp salt. Mix until smooth and evenly combined. Taste and adjust seasoning if needed.

Transfer the filling to a piping bag or use a small spoon for filling the jalapeño halves.

Assemble

Fill each jalapeño half with the cream cheese mixture, mounding slightly but not overfilling so it won't spill during cooking. Set filled peppers on a tray lined with parchment.

Place the filled peppers in the refrigerator for 10–15 minutes to firm the filling; this helps the coating adhere and reduces leakage when frying or air-frying.

Prepare Coating

Set up a dredging station: bowl 1 – flour with a pinch of salt; bowl 2 – whisk eggs with 2 tbsp milk until combined; bowl 3 – breadcrumbs mixed with grated Parmesan, cayenne (if using), and 1/4 tsp salt.

Roll each chilled, filled jalapeño first in flour, shaking off excess, then dip into the egg wash, letting excess drip off, and finally press into the breadcrumb mixture to coat evenly. For an extra-crisp double coat, repeat the egg and breadcrumb step once more.

Place coated jalapeños on a wire rack while you heat the oil. Refrigerate briefly if they become too soft before frying.

Cook (Fry or Air-Fry)

Pour vegetable oil into a heavy-bottomed pot to a depth of about 2 inches and heat to 350°F (175°C). Working in batches to avoid crowding, carefully lower 4–6 poppers into the oil and fry 2½–4 minutes, turning once, until golden brown and the jalapeño is tender. Use a slotted spoon to transfer to a paper towel-lined tray to drain.

Air-fryer (lower oil option)

Preheat air fryer to 375°F (190°C). Lightly spray the poppers with oil. Place in a single layer (do not overlap) and cook 8–12 minutes until golden and crisp, turning halfway through and spraying again if needed.

Let the poppers rest 2–3 minutes before serving; filling will be very hot.

Serve warm with lime wedges and optional dipping sauces (ranch, salsa, or a spicy mayo). Suggestion: garnish with additional chopped cilantro or a dusting of smoked paprika.
