Prepare shrimp

If the shrimp are refrigerated cooked, place them in a colander and rinse briefly under cold running water to remove any surface ice or packaging liquid. Drain well. If shrimp are frozen, thaw overnight in the refrigerator or quickly under cold running water until pliable, then drain thoroughly.

Season

Toss the drained shrimp gently in a bowl with the 1 tsp salt, 1/2 tsp black pepper and optional 1/2 tsp hot sauce (if using). Mix just enough to coat evenly without bruising the shrimp.

Chill

Fill a shallow serving bowl or plate with about 1 cup of ice. Arrange the seasoned shrimp on top of the ice in a single layer or slightly overlapping so they stay cold and presentable. Chill for at least 5 minutes to ensure shrimp are cold and firm.

Plate and garnish

Spoon 1/4 cup cocktail sauce into a small ramekin and place it on the serving plate beside the shrimp. Add 2 lemon wedges and sprinkle the chopped parsley over the shrimp for color. Serve immediately while cold.

Serving suggestion

Provide small forks or toothpicks for easy eating. Recommend guests squeeze lemon over shrimp and dip in cocktail sauce.
