Prepare the Ingredients
Gather all the ingredients: rye bread, corned beef, sauerkraut, Swiss cheese, Thousand Island dressing, and butter.

Assemble the Reuben Sandwich
Spread 1 tablespoon of Thousand Island dressing on one side of each slice of rye bread. On two slices, layer 4 oz of corned beef, 1/2 cup of drained sauerkraut, and 2 slices of Swiss cheese. Top with the other two slices of rye bread, dressing side down.

Grill the Sandwiches
In a skillet over medium heat, melt 1 tablespoon of butter. Place one sandwich in the skillet and grill for about 4-5 minutes until the bread is golden brown. Flip the sandwich, add the remaining butter, and grill the other side for an additional 4-5 minutes until the cheese is melted and the bread is crispy.

Repeat for the Second Sandwich
Remove the first sandwich from the skillet, and repeat the grilling process with the second sandwich.

Slice and Serve
Once both sandwiches are grilled, slice them in half and serve immediately with extra Thousand Island dressing on the side, if desired.
