    Prep the Potatoes

    Wash and peel the russet and sweet potatoes. Cut the russet potatoes into criss-cut shapes and the sweet potatoes into shoe-string fries. Alternatively, you can cut both types into rounds.

    Soak the Potatoes

    Soak the cut potatoes in cold water for at least 30 minutes. This helps remove excess starch and makes the fries crispier.

Frying

    Heat the Oil

    In a deep frying pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature for frying.

    Fry the Potatoes

    Carefully add the soaked potatoes to the hot oil in batches, ensuring not to overcrowd the pan. Fry the russet potatoes for about 4-5 minutes or until golden brown, and the sweet potatoes for about 3-4 minutes. Drain them on paper towels after frying.

Seasoning and Serving

    Season the Fries

    While the fries are still hot, sprinkle them with sour cream & onion seasoning, salt, and black pepper. Toss gently to coat evenly.

    Serve the fries in a basket lined with parchment paper. Enjoy while hot!
