Method

Croissant Roll Preparation

  1. 1

    Make the Dough

In a large bowl, combine the flour, sugar, salt, and yeast. Mix well. In a saucepan, heat the milk until warm (not boiling) and add the melted butter. Allow to cool slightly, then add the egg to the mixture. Combine wet and dry ingredients until a dough forms.

  2. 2

    Knead the Dough

Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth. Place it in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

  3. 3

    Roll and Shape

After the dough has risen, punch it down and roll it out into a rectangle. Fold the dough into thirds like a letter, then roll it out again and fold again. Repeat this process 3-4 times to create layers.

  4. 4

    Cut and Proof

Cut the dough into triangular shapes for croissants. Roll each triangle from the base to the tip. Place on a baking sheet lined with parchment paper, cover, and let them rise for another 30 minutes.

  5. 5

    Bake

Preheat the oven to 375°F (190°C). Bake the croissants for 15-20 minutes or until golden brown. Remove from the oven and let cool.

Grilled Chicken Preparation

  1. 6

    Prepare the Chicken

Rub the chicken breasts with olive oil, Cajun spice, salt, and black pepper. Ensure the chicken is evenly coated.

  2. 7

    Grill the Chicken

Preheat the grill to medium-high heat. Grill the chicken for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C). Remove from the grill and let rest for a few minutes.

Assembling the Dish

  1. 8

    Assemble

Slice the grilled chicken breast. Take a croissant roll and place sliced chicken on the bottom half. Top with pepper-jack cheese slices.

  2. 9

    Melt the Cheese

If desired, place the assembled croissant in a warm oven or under a broiler for a few minutes to melt the cheese.

  3. 10

    Serve

Close the croissant and serve warm. Enjoy your Saint Louis sandwich!
