Prepare the Vegetables

Slice the Vegetables
Thinly slice the green and red bell peppers and onion. Set aside.
Cook the Vegetables

Sauté the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced green and red bell peppers and onion. Season with salt and black pepper. Sauté for about 5-7 minutes until the vegetables are softened and slightly caramelized. Remove from the skillet and set aside.
Cook the Beef

Cook the Roast Beef
In the same skillet, add another tablespoon of olive oil and return the heat to medium-high. Add the thinly sliced roast beef to the skillet. Cook for about 3-5 minutes until warmed through, stirring occasionally.
Assemble the Cheese Steak

Combine and Melt
Once the beef is heated, return the sautéed vegetables to the skillet. Mix well to combine. Place provolone cheese slices on top of the meat and vegetable mixture. Cover the skillet with a lid to allow the cheese to melt, about 2-3 minutes.

Assemble the Sandwich
Once the cheese has melted, use a spatula to scoop the mixture onto the toasted hoagie buns. Serve immediately while hot.
