    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove and drain on paper towels.

    Sauté the Onions

    In the same skillet, add olive oil. Slice the onion into thin rings and sauté in the skillet for about 5-7 minutes or until they are caramelized and golden brown. Remove from heat.

    Prepare the Bison Patties

    In a large bowl, combine ground bison with salt and black pepper. Form the mixture into 4 equal patties.

Cooking the Patties

    Grill or Pan-Fry

    Heat a grill or skillet over medium-high heat. Cook the bison patties for about 4-5 minutes on each side for medium-rare, or longer if desired.

    Add Provolone Cheese

    In the last minute of cooking, place a slice of provolone cheese on each patty and cover to melt the cheese.

Assembling the Burger

    Build the Burger

    Toast the Kaiser rolls lightly. On the bottom half of each roll, place the cooked bison patty with melted provolone cheese, followed by sautéed onions, crispy bacon, and bleu cheese crumbles. Top with the other half of the roll.

    Serve immediately with your choice of sides, such as fries or a salad.
