Preparation of Filling

Cook the Meat
In a large skillet over medium heat, add the ground beef or shredded chicken. Cook until browned and thoroughly cooked, breaking it apart with a spatula if using ground beef.

Mix Cheese
Stir in 1 cup of shredded American cheese into the meat mixture. Remove from heat and set aside.
Making the Enchilada Sauce

Combine Ingredients
In a saucepan, combine the tomato sauce, water, taco seasoning, chili powder, cumin, salt, and pepper. Stir well.

Simmer
Bring the mixture to a simmer over medium heat. Allow it to simmer for about 10 minutes, stirring occasionally until it thickens slightly.
Assembling the Enchiladas

Preheat Oven
Preheat your oven to 350°F (175°C).

Soften Tortillas
Wrap the corn tortillas in a damp paper towel and microwave for 30-60 seconds until soft and pliable.

Fill Tortillas
Take one tortilla and place a generous amount of the meat and cheese mixture in the center. Roll it up tightly and place seam-side down in a greased baking dish.

Repeat
Repeat with the remaining tortillas and filling until all are in the baking dish.

Add Sauce and Cheese
Pour the enchilada sauce evenly over the top of the rolled tortillas. Sprinkle the remaining shredded American cheese over the sauce.
Baking

Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
Serving

Garnish
Once baked, remove from the oven and allow to cool for a few minutes. Serve hot, garnished with sour cream, chopped cilantro, and sliced jalapeños.
