Method

Preparation of Dough

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, combine the corn flour and salt.

  2. 2

    Add Water

Gradually add water to the corn flour mixture, stirring continuously until you achieve a smooth dough.

  3. 3

    Knead the Dough

Knead the dough for about 5 minutes until it becomes pliable and elastic. If the dough is too sticky, sprinkle a little more corn flour.

  4. 4

    Rest the Dough

Cover the dough with a damp cloth and let it rest for at least 30 minutes.

Cooking the Enchatreato

  1. 5

    Prepare Filling

In a bowl, mix the grated cheddar cheese, chopped cilantro, chopped bell peppers, and diced tomatoes until well combined.

  2. 6

    Shape the Enchatreato

Divide the dough into equal portions and roll each portion into a ball. Flatten each ball into a circle about ¼ inch thick.

  3. 7

    Add Filling

Place a generous amount of filling in the center of each circle. Fold the dough over the filling to create a half-moon shape, sealing the edges by pressing down with a fork.

  4. 8

    Heat Oil

In a large skillet, heat vegetable oil over medium heat.

  5. 9

    Cook Enchatreatos

Carefully place the filled enchatreatos in the hot skillet, cooking for about 4-5 minutes on each side or until they are golden brown and crispy.

Serving

  1. 10

    Garnish

Remove the cooked enchatreatos from the skillet and place them on a paper towel to drain excess oil.

  2. 11

    Plate and Serve

Serve the enchatreatos warm with a dollop of sour cream, slices of avocado, and lime wedges on the side.
