Cake Ingredients

For Greasing

Method

Preparation

  1. 1

    Preheat Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Prepare Ramekins

Grease four ramekins with 1 tablespoon of unsalted butter and dust with cocoa powder. Set aside.

Making the Cake Batter

  1. 3

    Melt Chocolate and Butter

In a microwave-safe bowl, combine 170g of semisweet chocolate and 115g of unsalted butter. Heat in the microwave in 30-second intervals, stirring in between, until fully melted and smooth.

  2. 4

    Whisk Eggs and Sugar

In a mixing bowl, whisk together 2 large eggs, 2 egg yolks, and 100g of granulated sugar until the mixture is pale and thick.

  3. 5

    Combine Mixtures

Pour the melted chocolate mixture into the egg mixture, and gently fold in until well combined.

  4. 6

    Add Dry Ingredients

Sift in 30g of all-purpose flour, 1 teaspoon of vanilla extract, and a pinch of salt. Fold the mixture until just combined, being careful not to overmix.

Baking

  1. 7

    Fill Ramekins

Evenly distribute the batter into the prepared ramekins, filling each about 3/4 full.

  2. 8

    Bake

Place the ramekins in the preheated oven and bake for 12-14 minutes, or until the edges are firm but the center is soft.

Serving

  1. 9

    Cool and Serve

Let the cakes cool for 1 minute. Invert each ramekin onto a plate and gently lift off to release the cake. Serve immediately, optionally with ice cream or whipped cream.
