Prepare the Beef (Optional)

Cook the Ground Beef
In a skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula as it cooks, about 5-7 minutes.

Season the Beef
Add taco seasoning and water to the cooked beef. Stir well to combine and let simmer for 3-5 minutes until the mixture thickens.
Prepare the Tortillas

Fry the Tortillas
In a large skillet, heat about 1 tablespoon of oil over medium-high heat. Once hot, place one corn tortilla in the skillet and fry for about 30 seconds on each side until golden and crisp. Repeat with the remaining tortillas.
Assemble the Cheese Crisp

Layer the Cheese
On each fried tortilla, sprinkle a generous amount of shredded cheddar and mozzarella cheese evenly over the surface.

Add Beef (Optional)
If using, add a spoonful of the seasoned ground beef on top of the cheese layer.
Melt the Cheese

Melt in the Oven
Preheat your oven to 400°F (200°C). Place the assembled tortillas on a baking sheet and put them in the oven for about 5-7 minutes, or until the cheese is fully melted and bubbly.
Serve

Garnish and Serve
Remove the cheese crisps from the oven. Top with sour cream, chopped green onions, and sliced jalapeños before serving hot.
