Cocktail

For fresh watermelon juice (yields ~2 cups)

Method

Prepare watermelon juice

Chop about 4 cups of chilled seedless watermelon into 1-inch pieces. Working in batches if necessary, place the watermelon in a blender and puree until smooth, about 20–30 seconds per batch.

Strain the puree through a fine-mesh sieve or chinois into a bowl, pressing with a spatula to extract as much liquid as possible. Discard solids. You should have approximately 2 cups (16 oz) of fresh watermelon juice. If desired, stir in 1/2 tsp lime zest for added brightness.

Chill the juice in the refrigerator if not using immediately.

Build the cocktail

Combine and shake

Add 2 oz Tito's Vodka, 4 oz fresh watermelon juice, 1/2 oz fresh lime juice, and 1/2 oz agave syrup into a cocktail shaker. Fill the shaker with ice (about 6 oz or enough to come 2/3 full).

Secure the lid and shake vigorously for 10–15 seconds until the shaker is very cold and slightly frosted.

Double-strain the cocktail into a chilled Collins glass or highball glass filled with fresh ice to remove small ice shards and any pulp.

Optional finish

Top with 1 oz club soda if you prefer a lighter, fizzy cooler. Gently stir once to combine.

Garnish and serve

Garnish with a small watermelon wedge or a watermelon ball on a pick, a lime wheel on the rim, and a sprig of fresh mint tucked into the glass.

Serve immediately with a straw or cocktail pick.
