Margarita

Housemade sweet & sour (makes about 2 cups)

Method

Housemade sweet & sour

1

Make sweet & sour

Combine 1 cup fresh lime juice, 1/2 cup fresh lemon juice, and 1 1/2 cups simple syrup (made by dissolving equal parts sugar and hot water and cooling). Whisk or shake in a jar until fully combined. Chill before using. Yields about 2 cups. Store refrigerated up to 5 days.

2

Prepare glass

Run a lime wedge around the rim of a chilled rocks or coupe glass. Dip the rim into coarse salt spread on a small plate to coat. Set glass aside.

3

Shake cocktail

Fill a cocktail shaker with 1 cup of ice. Add 2 oz Herradura Silver tequila, 1 oz triple sec, 2 oz housemade sweet & sour, and optional 1/4 oz fresh lime juice if you prefer a brighter acidity. Secure the lid and shake vigorously for 10-15 seconds until the shaker is cold to the touch and slightly frosted.

4

Strain & serve

Fill the prepared glass with fresh ice (about 1 cup). Double-strain the cocktail into the glass over the ice to remove any small ice shards. Garnish with the reserved lime wedge on the rim or floated in the drink.

5

Serving note

Serve immediately. Adjust sweetness by increasing or decreasing house sweet & sour by 1/4 oz increments to taste.
