Make batter

In a blender or large mixing bowl, combine 1 cup all-purpose flour, 1 cup whole milk, 2 large eggs, 1 tablespoon granulated sugar, 2 tablespoons melted unsalted butter, 1 teaspoon vanilla extract and a pinch of salt. Blend or whisk until the batter is very smooth and free of lumps, about 30–60 seconds in a blender or 2–3 minutes by hand. The batter should be thin — similar to heavy cream. If it thickens after resting, whisk gently before cooking.

Let the batter rest for 15–30 minutes at room temperature to relax the gluten and yield tender crespelle. If you need to hold it longer, refrigerate and bring back to room temperature before cooking.

Heat a nonstick skillet or crepe pan over medium heat. Lightly brush with a little neutral oil or melted butter (about 1/2 tsp per crepe). Pour or ladle approximately 2–3 tablespoons (enough to coat the bottom thinly — adjust for your pan size) of batter into the center, immediately tilt and swirl the pan to form a thin, even round. Cook until the edges lift and the underside is lightly golden, about 30–45 seconds. Flip with a spatula and cook the second side 10–20 seconds. Transfer to a plate and repeat, re-greasing the pan as needed. You should yield about 8–10 crespelle depending on pan size/thickness.

Filling (mascarpone + ricotta + espresso)

Prepare filling

While the batter rests or as the crespelle are cooling, place 8 oz mascarpone and 1 cup whole-milk ricotta in a medium bowl. Add 3 tablespoons powdered sugar, 1 teaspoon vanilla extract and a pinch of fine sea salt. Using a whisk or rubber spatula, gently fold and mix until smooth and spreadable. Do not overbeat — you want a silky, slightly dense filling.

Stir 2 tablespoons hot strong espresso (freshly brewed or instant dissolved in hot water) and 1 tablespoon coffee liqueur (optional) into the filling, or reserve the espresso to brush on the crepes layers if you prefer a more distinct coffee note between layers. Taste and adjust sweetness with a little more powdered sugar if desired.

Assembly & garnish

Layer crespelle

Place one crespella on a serving plate. Lightly brush the top with a little of the extra espresso (about 1/2 tablespoon) to moisten and add coffee flavor. Spread about 2–3 tablespoons of the mascarpone-ricotta filling evenly over the crespella, leaving a small border. Top with a second crespella and repeat brushing and spreading. Continue layering until you have used 6–8 crespelle or until the filling is used, finishing with a top crespella.

For a taller presentation, you can use all crespelle and thinly spread filling on each layer. If you have leftover filling, dollop it on top or pipe a decorative rosette.

Finish and garnish

Sift 1 teaspoon unsweetened cocoa powder over the top to create a light dusting. Dust with a little powdered sugar if you like. Scatter 2 tablespoons shaved dark chocolate or chocolate curls over the top. Let the assembled crespelle rest in the refrigerator for 20–30 minutes to set (this also helps the layers meld). Before serving, optionally brush the exposed edges lightly with the remaining espresso for shine and extra coffee aroma.
