    Prepare ginger

    Peel the ginger with a spoon or paring knife and thinly slice it to increase surface area. Measure 1 cup of sliced ginger (about a 4–5 oz piece).

    Make syrup

    Combine 2 cups water, 1 cup granulated sugar, 2 tablespoons packed brown sugar, sliced ginger, allspice berries and cloves (if using) in a medium saucepan. Bring to a simmer over medium heat, stirring to dissolve sugars. Once simmering, reduce heat to low and gently simmer, uncovered, for 25–30 minutes until the liquid is fragrant and slightly reduced.

    Steep and finish

    Remove the pan from heat and let the ginger steep in the syrup for 30–60 minutes (longer for stronger ginger flavor). After steeping, add 2 tablespoons fresh lemon juice and 1 tablespoon fresh lime juice, stir, then strain the syrup through a fine-mesh sieve or cheesecloth into a heatproof container, pressing on the solids to extract as much liquid as possible. Discard solids. Cool to room temperature, then refrigerate until cold. Syrup will keep in the refrigerator for up to 2 weeks or can be frozen for longer storage.

    Chill a 1 L bottle or pitcher and the carbonated water if not already cold. Fill a serving pitcher or bottle with ice if you prefer the drink chilled on serving; otherwise, skip ice for a non-diluted batch.

    Measure 3 tablespoons ginger syrup per 1 cup (240 ml) of carbonated water as a starting ratio for a balanced ginger ale. For a full 1 L (1000 ml) of chilled carbonated water, add about 12–13 tablespoons (3/4 to 1 cup) of ginger syrup, depending on taste (start with 12 tbsp).

    Add the measured ginger syrup to the chilled carbonated water in a pitcher. Stir gently with a long spoon to combine, taking care not to flatten the carbonation. Taste and adjust: add more syrup for spicier/sweeter ginger ale or dilute with more carbonated water if too strong.

    Serve over ice in individual glasses if desired, garnish with lemon or lime slices and a sprig of mint. Refrigerate leftover ginger ale in a sealed bottle and consume within 24–48 hours for best fizz.
