Sushi Rice & Seasoning

Rinse and cook rice
Rinse 2 cups short-grain sushi rice under cold water until the runoff is mostly clear. Drain and add to a rice cooker with 2.25 cups water. Cook according to rice cooker instructions (or simmer covered on stovetop until water is absorbed, about 15–18 minutes), then let rest covered 10 minutes.

Season rice
While rice cooks, gently warm 4 tbs rice vinegar, 2 tbs sugar, and 1 tsp kosher salt in a small saucepan (do not boil) just to dissolve sugar. Transfer cooked rice to a large shallow wooden or nonreactive bowl. Drizzle vinegar mixture over hot rice and fold gently with a rice paddle or spatula to combine and cool to near room temperature (fan rice while folding to give shine). Cover with a damp towel to keep moist.

Prepare fillings: blanch 6 asparagus spears in boiling salted water 30–45 seconds until bright green and tender-crisp; transfer to ice water and drain, then trim to the length of the roll (about 7–8 cm). Slice avocado into batons. Julienne 1/2 cup seeded cucumber into matchsticks. Flake 4 oz shredded snow crab and season lightly with a pinch of salt and a teaspoon of ponzu if desired.

Prepare cucumber exterior: using a mandoline or sharp knife, thinly slice the English cucumber lengthwise into very thin long ribbons (about 1–1.5 mm thick). If the seeds are watery, use a spoon to scrape them out before slicing. Lay a piece of plastic wrap over a bamboo mat and arrange overlapping cucumber slices lengthwise so that you have a sheet slightly wider than the mat (they should overlap like shingles) and long enough to wrap the roll.

Assemble inside roll on nori (optional): place a half nori sheet, rough side up, on the plastic-wrapped mat. Wet your hands and spread an even layer of sushi rice (about 3/4 to 1 cup) onto the nori leaving a 1/2-inch border at the far edge. Arrange the crab, avocado batons, cucumber julienne and 2–3 asparagus spears in a line along the near edge of rice. Using the mat, roll firmly but gently into a tight cylinder. If you prefer a rice-less inside (inside-out style), skip nori and place rice directly on the plastic before filling.

Layer fish on top: arrange the thin slices of tuna, salmon, and yellowtail in an attractive pattern across the top of the cucumber-wrapped roll so that slices slightly overlap and fully cover the roll exterior. Press lightly so fish adheres to cucumber. If needed, chill the wrapped roll for 5–10 minutes to help it set so slices stay in place.
Finishing & Garnish

Slice the roll: with a very sharp knife dipped in water and wiped dry between cuts, trim the ends for clean edges. Slice the roll into 8 equal pieces (clean the knife between cuts). Wipe and wet the blade as needed to keep slices neat.

Top and garnish: place a small amount of shredded snow crab into the center of each slice if you reserved some, or lightly mound crab across the top where fish overlaps. Sprinkle 1–2 teaspoons masago across the pieces (total about 2 tbs). Garnish with microgreens or thinly sliced scallions.

Sauce: mix 4 tbs ponzu with 1/2 tbs lime juice (optional) and drizzle lightly over the roll pieces just before serving. Serve additional soy sauce on the side for dipping.
Serving & Storage

Serve immediately: serve Geisha Kiss Roll immediately after slicing for best texture and flavor. Leftover slices can be stored tightly wrapped in plastic in the refrigerator up to 24 hours but are best fresh.
