Sushi Rice

    Rinse the short-grain rice under cold water until the rinse runs mostly clear (3–5 rinses). Drain and place in a rice cooker or pot with 2.25 cups water.

    Cook according to rice cooker instructions or bring to a boil, cover, reduce to low and simmer 15 minutes; remove from heat and rest covered 10 minutes.

    While rice cooks, combine rice vinegar, sugar and salt in a small bowl and stir until sugar dissolves.

    Transfer cooked rice to a wide non-metallic bowl. Pour vinegar mixture over rice and fold gently with a paddle or spatula to coat and cool. Fan the rice to help it shine. Cover with a damp towel and keep at room temperature until assembly.

Filling

    Shred the crab sticks or flake the cooked crab into bite-size pieces. In a bowl, mix crab with Japanese mayonnaise and sriracha (if using) until evenly combined. Taste and adjust mayo or spice to preference.

    Julienne the cucumber and slice the avocado lengthwise into 6–8 thin slices. Keep avocado lightly coated with a tiny squeeze of lemon or lime juice if desired to slow browning.

Outer Crunch Preparation

    If using panko: heat 2 tablespoons vegetable oil in a small skillet over medium heat. Add panko and toast, stirring frequently, until golden and crisp (2–4 minutes). Let cool. If using tenkasu (tempura scraps), no toasting necessary; they are already crunchy.

    Mix toasted panko (or tenkasu) with toasted sesame seeds. Set aside.

Assemble Rolls

    Place a plastic-wrapped bamboo mat on your work surface. Put one nori sheet shiny side down on the mat. Wet your hands and evenly spread about 3/4 cup of sushi rice over the nori, leaving a 1-inch (2.5 cm) strip at the far edge free of rice.

    Sprinkle a thin line (about 1–2 tablespoons) of the panko/sesame mixture across the center of the rice. This will create the outer crunchy layer when rolled.

    Place a line of the crab-mayo mixture (about 2–3 tablespoons), a few cucumber julienne strips, and 3–4 avocado slices just in front of the crunchy line (closer to you). Keep fillings in a neat line to make rolling easier.

    Using the mat, lift the near edge of nori and rice and roll away from you, pressing gently to form a tight cylinder. Roll until the exposed nori edge seals the roll. Use a little water on the exposed nori to help seal if needed.

    If you prefer a classic ‘inside-out’ (rice on outside) crunchy roll: after rolling with nori inside (as above), place seam side down. Wet your hands, spread a thin layer of rice on the outside of the roll and gently press additional toasted panko crumbs onto the rice to adhere. Alternatively, for simplicity, spread rice on nori first and roll so rice is outside and nori inside (ensure you still have a 1-inch border to seal).

Finish & Serve

    Using a very sharp knife dipped in water, cut the roll into 8 equal pieces. Wipe the knife between cuts to keep slices clean.

    Arrange pieces on a platter. Optional: drizzle additional Japanese mayonnaise or spicy mayo on top, or sprinkle extra toasted panko for crunch.

    Serve immediately with soy sauce, pickled ginger, and wasabi on the side.
