Chill water
Place the filtered water in the refrigerator for at least 30 minutes so it is very cold. Cold water absorbs CO2 more readily and yields stronger carbonation.

Optional: add mineral salts
If you want club-soda-style minerality, dissolve the baking soda and the pinch of sea salt into the cold water. Stir until completely dissolved. This adds a subtle saline/alkaline note similar to commercially mineralized club sodas.

Carbonate
Using a home carbonation device (soda siphon, soda maker, or CO2 cylinder system), follow the manufacturer's instructions to carbonate the prepared cold water. Typically: fill the carbonation bottle to the indicated fill line, screw on the head, and press the carbonation lever or inject 1–3 short bursts of CO2. For medium carbonation, apply 2 short bursts; for very fizzy soda, apply 3. Allow pressure to settle between bursts per device guidance.

Rest and chill
After carbonating, let the bottle sit upright in the refrigerator or on the counter for 1–2 minutes to let CO2 dissolve fully and the pressure stabilize. Keep it cold until serving—warmer liquid will lose bubbles faster.
