Cook the Prime Rib

Season the prime rib roast with salt and pepper. Roast in a preheated oven at 350°F (175°C) for about 1.5 to 2 hours, or until desired doneness is reached. Let it rest for 15 minutes before slicing thinly.

Sauté the Vegetables

In a skillet, heat olive oil over medium heat. Add sliced onions and mushrooms, and sauté until softened and caramelized, about 5-7 minutes.

Toast the Bread

In the same skillet, lightly toast the sourdough bread slices until golden brown on both sides.

Assemble the Sandwich

On a slice of toasted sourdough bread, layer thin slices of prime rib, sautéed mushrooms, onions, and tomato. Top with asadero cheese. If desired, add green chile or sliced jalapeños.

Finish the Sandwich

Top with another slice of toasted sourdough bread. Press down lightly and cut in half to serve.
