Lamb & seasoning

Bring lamb to room temperature

Remove the lamb racks from the refrigerator 30–45 minutes before cooking so they come to near room temperature. Pat dry with paper towels.

Trim excess fat and frenched bones if not already done. Season the meat side generously with 2 tsp kosher salt and 1 tsp freshly ground black pepper, pressing the seasoning into the surface.

Preheat oven to 200°C (400°F). Heat a large ovenproof skillet over medium-high heat until hot. Add 2 tbs olive oil.

Sear the racks, fat side down first, 2–3 minutes until deeply golden. Sear the meat side 1–2 minutes. Add 1 tbs unsalted butter, smashed garlic cloves and rosemary to the pan; spoon butter over the racks for 30 seconds to baste.

Transfer skillet to oven and roast for 12–15 minutes for medium-rare (internal temperature 54–57°C / 130–135°F). For medium, roast 16–18 minutes. Remove racks to a cutting board, tent loosely with foil and rest 10 minutes before slicing.

Potato purée

Place the diced Yukon Gold potatoes in a large pot and cover with cold water by 1 inch. Add 1 tsp salt. Bring to a rapid simmer and cook until potatoes are very tender, 15–18 minutes.

Drain potatoes thoroughly and return to the hot pot on low heat for 1–2 minutes to evaporate residual moisture, shaking occasionally.

Warm the milk and heavy cream together in a small saucepan until just simmering. Using a potato ricer or food mill, pass the potatoes into a large bowl for the smoothest texture. If using a masher, mash until very smooth.

Stir in 3 tbs unsalted butter until melted. Gradually add warmed milk/cream while stirring to reach a silky consistency. Season with 1 tsp salt and 1/4 tsp white pepper. Finish with 1 tbs extra butter folded in for sheen.

Pistachio crumb

Pulse 3/4 cup shelled pistachios in a food processor to a coarse crumb (small pieces, not powder). Transfer to a bowl.

Stir in 2 tbs finely chopped parsley, 1 tsp lemon zest, 1 tsp olive oil and 1/4 tsp salt. Taste and adjust seasoning. Keep at room temperature; it will be used as a crunchy finish on the lamb.

Tomato butter

In a small saucepan over medium heat, add 1 tbsp minced shallot with a drizzle of oil and sweat gently for 1–2 minutes until translucent but not colored.

Add the chopped tomatoes and 2 tbs white wine (or stock). Cook down, stirring occasionally, until tomatoes break down and mixture is thickened, about 8–10 minutes. Stir in 1/4 tsp sugar if tomatoes taste tart.

Lower the heat to low. Off the heat, whisk in the cold cubed butter, one or two pieces at a time, whisking constantly to emulsify into a glossy butter sauce (monter au beurre). When all butter is incorporated, season with 1/2 tsp salt and 1/4 tsp black pepper. Keep warm, not hot, so it stays emulsified.

Za'atar garnish & plating

Slice the rested lamb racks into individual chops (usually 8 chops total from two racks). Brush a light film of extra virgin olive oil over the meat sides and sprinkle 2 tsp za'atar evenly across the chops.

Plate a generous spoonful of potato purée on each plate. Arranged 4 lamb chops per plate (adjust if serving size differs). Spoon warm tomato butter around and lightly over the lamb.

Sprinkle a tablespoon of pistachio crumb over each rack/chop for texture and finish with microgreens if using. Serve immediately.
