Pound Cake (1 loaf)

Method

Pound Cake (1 loaf)

  1. 1

Preheat the oven to 325°F (162°C). Position a rack in the center. Grease a 9x5-inch loaf pan thoroughly with softened butter or nonstick spray, then dust with 2 tablespoons flour, tapping out excess.

  2. 2

    Prepare dry ingredients

In a medium bowl whisk together 2 cups all-purpose flour, 1 teaspoon baking powder, and 1 teaspoon fine salt. Set aside.

  3. 3

    Cream butter and sugar

In the bowl of a stand mixer fitted with the paddle (or large bowl with hand mixer), beat 1 cup room-temperature unsalted butter on medium speed until smooth (~30 seconds). Add 1 cup granulated sugar and beat on medium-high for 3–4 minutes until light and fluffy and pale in color, scraping the bowl once or twice.

  4. 4

    Add eggs

Add the 4 large eggs one at a time, beating 20–30 seconds after each addition and scraping the bowl as needed so mixture remains even. Do not add the next egg until the previous is incorporated.

  5. 5

    Alternate flour and milk

Reduce mixer to low. Add the dry ingredients and 1 cup whole milk alternately in three additions of dry and two additions of milk (dry, milk, dry, milk, dry), beginning and ending with the dry ingredients. Mix just until combined after each addition — avoid overmixing. Add 2 teaspoons vanilla and 2 tablespoons vegetable oil (optional) and mix until smooth and uniform.

  6. 6

    Bake

Pour batter into prepared loaf pan and smooth the top with a spatula. Tap the pan gently on the counter to release large air bubbles. Bake in the preheated oven for 55–70 minutes, or until the top is golden and a toothpick inserted in the center comes out with a few moist crumbs (not wet batter). If the top is browning too quickly, tent loosely with foil after 35–40 minutes.

  7. 7

    Cool

Remove from oven and let the loaf cool in the pan on a wire rack for 15–20 minutes. Run a thin knife around the edges, invert onto the rack, and remove the pan. Let cool completely (at least 1 hour) before frosting.

Buttercream (split half vanilla / half chocolate)

  1. 8

    Make base buttercream

In a large bowl or stand mixer fitted with the paddle, beat 1 cup room-temperature unsalted butter on medium speed for 1–2 minutes until creamy. With the mixer on low, gradually add 4 cups sifted confectioners' sugar, about 1 cup at a time, mixing until incorporated and sanding texture disappears. Add 2 teaspoons vanilla, 1 teaspoon fine salt, and 2 tablespoons milk or cream; beat on medium-high for 2 minutes until light and fluffy. If too stiff, add the remaining milk tablespoon by tablespoon until spreadable; if too soft, add a little more sifted sugar.

  2. 9

    Portion

Divide the prepared buttercream into two equal bowls (about 1.5 cups each). This yields approximately half vanilla and half chocolate.

  3. 10

    Prepare chocolate buttercream

In a small cup, combine 4 tablespoons unsweetened cocoa powder with 2 tablespoons hot water or strong hot coffee, stirring until smooth and a thick chocolate paste forms. Add the cocoa paste to one portion of buttercream and beat by hand or with a mixer on low until fully incorporated and smooth. Taste and adjust: add up to 1/2 cup additional sifted confectioners' sugar for sweetness/structure or a teaspoon of vanilla if desired. If the chocolate buttercream is too soft, chill briefly (10–15 minutes) and re-whip.

  4. 11

    Final texture

Ensure both buttercreams are smooth and spreadable but fairly stable (pipeable). If needed, adjust consistency with small amounts of milk (thin) or additional sifted sugar (stiffen).

Assemble & Finish

  1. 12

    Level and slice (optional)

If the loaf has a domed top, trim a thin layer to create a flat surface for easier frosting. Alternatively, slice the loaf horizontally into two thinner layers for a filled appearance—this is optional. Place the loaf on a serving board or plate.

  2. 13

    Crumb coat

Apply a thin crumb coat using a spatula: spread a light layer of the vanilla buttercream over the entire loaf to trap crumbs. Chill the loaf in the refrigerator for 15–20 minutes to set the crumb coat.

  3. 14

Final frosting - half & half

Place the loaf on the work surface. Using an offset spatula or small knife, spread the vanilla buttercream over one half of the top and one long side of the loaf. Clean your spatula and then spread the chocolate buttercream over the other half of the top and the opposite long side. Smooth the join where the two frostings meet so there is a clear half-and-half division. You can create a decorative seam by lightly dragging the tip of a knife along the meeting line for a clean edge.

  4. 15

    Decorate (optional)

Pipe borders or small rosettes along the top edges using each respective buttercream for a finished look. Alternatively, dust the vanilla side lightly with sifted confectioners' sugar and the chocolate side with a pinch of cocoa powder for contrast.

  5. 16

    Rest before serving

Let the frosted loaf sit at room temperature for 20–30 minutes for the buttercream to soften slightly for easier slicing, or chill for firmer slices. Slice with a sharp knife wiped between cuts for clean pieces. Serve and store: keep covered at room temperature for up to 2 days or refrigerate up to 5 days (bring to room temperature before serving).
