    Prep chicken

    Trim excess fat from the chicken thighs and pat them dry with paper towels. Season both sides with 1 teaspoon kosher salt and 1 teaspoon black pepper.

    Sear chicken

    Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering. Add the chicken thighs, working in a single layer (cook in batches if needed). Sear without moving for 4–5 minutes until a deep golden crust forms, then flip and sear the other side 3–4 minutes.

    Make sauce

    While chicken sears, whisk together 3 tablespoons soy sauce, 2 tablespoons honey, 1 tablespoon rice vinegar, 3 minced garlic cloves, 1 teaspoon grated fresh ginger, and 1/4 teaspoon chili flakes in a bowl until honey dissolves.

    Finish cooking in sauce

    When both sides of the chicken are browned, reduce heat to medium-low and pour the sauce into the skillet. Spoon sauce over the chicken and simmer gently, uncovered, for 6–8 minutes, turning the thighs once or twice, until the internal temperature reaches 165°F (74°C) and the sauce has thickened and glazed the chicken.

    Remove the chicken to a cutting board and let rest for 5 minutes. Slice or serve whole. Sprinkle with 2 sliced green onion stalks and 1 teaspoon sesame seeds. Serve with lemon wedges on the side to squeeze over the chicken just before eating.
