Measure ingredients
Measure 1 cup granulated sugar and 1 tablespoon ground cinnamon into a medium mixing bowl. Add 1 teaspoon fine sea salt. If using, add 1 teaspoon ground nutmeg for extra warm spice note and 1/2 teaspoon cornstarch to help prevent clumping during storage.

Blend thoroughly
Whisk the sugar, cinnamon, salt, and any optional ingredients vigorously for 30–60 seconds until the mixture is evenly colored and no visible streaks of cinnamon remain. For a finer, more homogenous mix, pulse the ingredients briefly in a spice grinder or blender (5–10 short pulses), then sift once through a fine-mesh strainer to remove any lumps.

Taste and adjust
Taste a pinch of the mixture. If you prefer a stronger cinnamon flavor, add up to an additional 1/2 tablespoon ground cinnamon, whisking again to combine. If the mix tastes too salty, reduce or omit the salt next time.

Transfer the cinnamon sugar to an airtight container (a glass jar with a tight lid is ideal). Store in a cool, dry place away from direct heat or sunlight for up to 6 months. If using cornstarch, shake the jar before each use to redistribute and prevent clumps. If clumping occurs, break up with a fork or pulse briefly in a grinder.
