Tuna Preparation
Trim & portion
Pat the tuna loin dry with paper towels. If needed, trim any silvery membrane. Weigh 130 g of tuna and, if the piece is thicker than 1.5–2 cm, slice horizontally to create an even steak about 1.5–2 cm thick so it cooks quickly and evenly.
Season
Lightly season both sides of the tuna with 1 tsp kosher salt and 1/4 tsp freshly ground black pepper. Set aside on a plate for 2–3 minutes to let the salt draw out minimal moisture.
Breading Station
Set up three shallow dishes: place the 2 tbs flour in the first, the beaten egg in the second, and the 3/4 cup panko breadcrumbs in the third. Lightly press the panko with your fingers to remove very large clusters for an even coating.
Dredge the seasoned tuna: first lightly coat both sides in flour, shaking off excess; then dip into the beaten egg, letting excess drip off; finally press firmly into the panko breadcrumbs to coat both sides evenly. Ensure the edges are well covered. Place the breaded tuna on a wire rack while you heat the oil.
Frying
Heat 1 cup neutral oil in a heavy skillet (cast-iron or stainless) over medium-high heat until shimmering and a small piece of panko sizzles immediately (about 170–180°C / 340–355°F). If you don't have a thermometer, heat 3–4 minutes until hot but not smoking.
When the crust is golden brown and crisp, transfer the tuna to a paper towel–lined plate or wire rack to drain briefly. Let it rest 1 minute to carryover cook slightly.
Sauce & Serving
Plate: place 1/2 cup shredded cabbage (if using) on the plate as a bed. Slice the maguro katsu into 4–6 even slices (cut against the grain) and arrange over the cabbage.
Finish: spoon 2 tbs tonkatsu sauce over the slices or serve on the side. Dot or thinly drizzle 1 tsp Japanese mayonnaise across the top. Sprinkle 1/2 tsp toasted sesame seeds and 1 tbs chopped scallion or microgreens. Serve with 2 lemon wedges to squeeze over just before eating.
Tips: For a crispier crust, double-dip in egg and panko before frying. Do not overcook tuna: aim for a warm center that remains pink. Adjust salt and sauce amount to taste.
