Juice the citrus
Roll limes and lemons on the counter to loosen juices. Cut and juice until you have about 3/4 cup combined fresh juice (about 1/2 cup lime + 1/4 cup lemon). If using grapefruit, juice and measure 1/4 cup and remove any seeds.
Sweeten and season
In a large pitcher, combine the fresh lime juice, lemon juice, grapefruit juice (if using), agave syrup, and sea salt. Stir vigorously until the agave and salt are fully dissolved. Taste and adjust sweetness or salt β mineragua is slightly savory-sour, so a small amount of salt is important.
Add mineral water
Chill the sparkling mineral water well. Pour the mineral water into the pitcher slowly and gently fold it into the citrus-sweetened mixture to preserve carbonation. Taste and adjust: add up to 1β2 tablespoons extra agave if you prefer sweeter, or a splash more mineral water if too concentrated.
Refrigerate briefly
Let the combined drink rest in the refrigerator for 10β15 minutes so flavors marry while staying fizzy. Do not leave too long or carbonation will dissipate.
Garnish & Serve
Fill tall glasses with ice (about 1 cup ice per serving). Pour the chilled mineragua over ice, leaving some room at the top for garnish.
Garnish each glass with a lime wheel or wedge and a mint sprig if desired. Serve immediately while fizzy.
To make ahead: keep the citrus-agave base refrigerated and separately keep mineral water chilled. Combine and gently stir immediately before serving to retain carbonation.
