Cook pasta
Bring a large pot of salted water to a rolling boil. Add 2 cups elbow macaroni and cook until just al dente (about 1 minute shy of package directions). Drain thoroughly and return to the pot.
Make béchamel
In a medium saucepan over medium heat, melt 2 tbs unsalted butter. Whisk in 2 tbs all-purpose flour and cook for 1–2 minutes, stirring constantly, until fragrant and lightly golden (do not brown). Gradually whisk in 1 cup whole milk until smooth. Continue stirring and cook until thickened and coating the back of a spoon, about 3–5 minutes.
Finish cheese sauce
Remove the béchamel from heat and whisk in 1 tsp Dijon mustard, 1 tsp salt, 1/2 tsp black pepper, and 1/2 tsp smoked paprika. Stir in 2 cups grated sharp cheddar and 1 cup grated mozzarella a handful at a time until fully melted and smooth. Taste and adjust seasoning if needed.
Combine pasta and cheese
Add the drained pasta to the cheese sauce and stir until evenly coated. Spread the cheesy pasta in a shallow pan or baking sheet to cool slightly (about 10–15 minutes) — cooling makes it easier to form bites. If mixture seems thin, chill in the fridge 20–30 minutes until firm enough to shape.

Form the bites
Using wet or lightly oiled hands or a small scoop, portion about 1.5 tablespoons of the cooled mac & cheese mixture and roll into compact balls or slightly flattened rounds (approx. 1 inch–1.25 inch diameter). Place formed bites on a baking sheet lined with parchment. Continue until all mixture is used; you should get about 20–24 bites depending on size.
Dredge and coat
Working in batches, roll each mac & cheese ball first in flour (shake off excess), then dip in beaten egg, then roll in the breadcrumb-parmesan mixture, pressing lightly to adhere. Place coated bites back on the sheet. For a thicker crust, repeat the egg and breadcrumb step once more.
Cook the bites (frying method)
Heat 1/2 cup vegetable oil in a deep skillet or heavy-bottomed pot to 350°F (175°C). Fry bites in batches, careful not to overcrowd, turning occasionally, until golden brown and crisp, 2–3 minutes per side. Remove with a slotted spoon to a paper-towel-lined tray to drain.
Cook the bites (oven method)
Preheat oven to 425°F (220°C). Place coated bites on a parchment-lined baking sheet and lightly brush or spray each with olive oil. Bake for 12–16 minutes, turning once halfway through, until golden and crisp. For extra crispness, broil 1–2 minutes at the end while watching carefully to avoid burning.
Optional Garnish & Serving
Transfer bites to a serving platter. Sprinkle with 2 tbs chopped fresh parsley and serve hot with 1/2 cup ranch or spicy ketchup for dipping. If serving after cooling, reheat in a 375°F (190°C) oven for 6–8 minutes to restore crispness.
