Preheat Oven

Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

Mix Dry Ingredients

In a large bowl, whisk together flour, sugar, baking powder, cinnamon, cardamom, ginger, and salt until well combined.

Cream Butter and Sugar

In another bowl, beat the butter until creamy. Gradually add the sugar and beat until light and fluffy.

Add Eggs and Vanilla

Add eggs one at a time, beating well after each addition. Stir in the vanilla extract and orange zest.

Combine Mixtures

Gradually mix the dry ingredients into the wet mixture, alternating with milk until just combined.

Bake the Cake

Pour the batter into the prepared baking pan. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Cool the Cake

Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Heat Cream

In a saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat.

Whisk Egg Yolks and Sugar

In a bowl, whisk together the egg yolks and sugar until pale and thick.

Temper Yolks

Slowly pour the hot cream into the egg yolk mixture while whisking continuously to temper the yolks.

Cook the Mixture

Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens and coats the back of a spoon.

Add Flavorings

Remove from heat, then stir in the orange juice, coffee granules, and vanilla extract. Allow to cool before serving.

Prepare Crumble

In a medium bowl, combine the flour, brown sugar, ground ginger, and salt.

Add Butter

Cut the butter into small pieces and add to the flour mixture. Use your fingers to rub the butter into the dry ingredients until it resembles coarse crumbs.

Bake Crumble

Spread the crumble evenly on a baking sheet and bake in the oven at 350°F (175°C) for 15-20 minutes or until golden brown, stirring occasionally.
