Slice the Chorizo

Begin by slicing the Spanish chorizo into thin rounds, about 1/4 inch thick.

Prepare the Garnish

Chop the fresh parsley finely and set aside. Cut the lemon into wedges for serving.

Heat the Oil

In a large skillet, heat the olive oil over medium heat.

Cook the Chorizo

Add the sliced chorizo to the skillet and cook for about 5-7 minutes, stirring occasionally, until the chorizo is browned and has released its flavorful oils.

Add Seasoning

Sprinkle the smoked paprika, garlic powder, black pepper, and salt (to taste) over the chorizo. Stir well to combine and cook for an additional 2 minutes.

Transfer the cooked chorizo to a serving platter, and garnish with the chopped parsley.
