In a large pot, heat 16 cups of water to around 160°F (71°C). Add the Pale Malt and Caramel Malt, stirring well to combine. Maintain the temperature at around 150-155°F (65-68°C) for 60 minutes.

Mashing

After mashing, drain the liquid (wort) from the grains into a kettle, and rinse the grains with additional hot water to extract more sugars.

Lautering

Bring the wort to a boil. Once boiling, add the Mosaic Hops, and boil for 30 minutes. Then add the Cascade Hops and continue boiling for another 15 minutes.

Boiling

After boiling, cool the wort as quickly as possible using a wort chiller or an ice bath until it reaches around 70°F (21°C).

Cooling

Transfer the cooled wort to a sanitized fermentation vessel. Add the yeast and seal the vessel with an airlock. Allow it to ferment at a stable temperature for about 1-2 weeks.

Fermentation

Once fermentation is complete, dissolve the priming sugar in a small amount of water and add it to the beer. Bottle the beer using sanitized bottles and caps.

Bottling

Let the bottles condition at room temperature for 1-2 weeks to carbonate before refrigerating.
