Sandwich
Prepare bread
Slice the sandwich roll lengthwise. If you like, toast cut sides lightly in a skillet or oven until golden (2–4 minutes) for extra texture. Spread mayonnaise or softened butter thinly on the bottom half, if using.
Layer meats and cheese
On the bottom half of the roll, arrange the meats in this order for balanced flavor and texture: lay down the Genoa salami (6 slices) slightly overlapping, then the spicy capicola (4 slices), then pepperoni (6 slices), and finally the ham (4 slices). Top the meats with the provolone slices (3 slices), slightly overlapping.
Add giardiniera and aromatics
Evenly distribute the drained hot giardiniera (2 tbsp) over the provolone. If the giardiniera pieces are large, chop them coarsely first so they distribute better. Sprinkle the dried oregano (1 tsp) over the cheese and peppers.
Vegetables
Top with the tomato slices (4 slices) arranged in a single layer, then the shredded lettuce (1 cup). If using, add the thin red onion rings (4 rings). Season the tomato and lettuce lightly with kosher salt (1/4 tsp) and freshly ground black pepper (1/8 tsp).
Dressing
If using store-bought Italian dressing, shake well and drizzle about 2 tablespoons evenly over the tomato and lettuce layer. If the dressing seems too thick or sharp, whisk together 2 tbsp Italian dressing with 1 tsp extra-virgin olive oil and 1/2 tsp red wine vinegar to balance and then drizzle. Reserve any extra dressing for serving.
Assembly / Finish
Close the sandwich with the top half of the roll. Press down gently to compress the layers slightly. If desired, wrap the sandwich in parchment and press for 2–3 minutes to meld flavors, or briefly warm in a sandwich press for 1–2 minutes until cheese softens (optional).
Cut the sandwich in half on the bias. Serve immediately with pickles or chips as desired.
