Sauté aromatics

Heat a medium saucepan over medium heat. Add 2 tbs olive oil. When shimmering, add the finely chopped onion and sauté 6–8 minutes until soft and starting to brown. Add the minced garlic and cook 30–45 seconds until fragrant.

Build the sauce

Stir in 3 tbs tomato paste and cook 1 minute to deepen flavor. Add 1 cup ketchup, 1 cup apple cider vinegar, 1 cup packed brown sugar, and 2 tbs molasses. Stir until combined.

Season and simmer

Add 2 tsp mesquite smoked paprika, 1 tsp ground cumin, 1 tsp chili powder, 2 tbs Worcestershire sauce, 1 tbs soy sauce, 1 tsp hot sauce (if using), 1.5 tsp kosher salt and 1/2 tsp black pepper. Pour in 1/2 cup water to loosen. Bring to a low simmer, then reduce heat to low and simmer gently, uncovered, 20–25 minutes, stirring occasionally, until slightly thickened and flavors meld.

Finish and adjust

Taste and adjust seasoning—add more salt, acid (a splash of vinegar), or sweetness (a touch more sugar or molasses) if desired. If you prefer a smooth sauce, blend with an immersion blender or in a regular blender until smooth. Keep warm until ready to baste.

Mesquite Dry Rub

Combine the dry rub ingredients in a small bowl: 1 tbs brown sugar, 3/4 tsp kosher salt, 1 tsp mesquite smoked paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/4 tsp black pepper, and 1/8 tsp cayenne (optional). Mix thoroughly and set aside.

Prep protein

Trim excess fat from 3 lb boneless pork shoulder (or prep ribs/chicken thighs). Pat dry with paper towels. Rub the meat all over with the mesquite dry rub (use all or as needed), pressing to adhere. Let rest at room temperature 30 minutes or refrigerate up to overnight for more flavor (bring back to room temperature before cooking).

Cook (oven or grill method)

Oven method: Preheat oven to 300°F (150°C). Place the rubbed pork in a roasting pan or Dutch oven. Pour 1 cup apple juice or beer into the pan to provide moisture. Cover tightly with foil or lid and roast 3–3.5 hours until fork-tender (internal temp ~195°F for pulled pork). Remove lid for the last 20–30 minutes to allow bark formation. Grill method: Preheat grill for indirect medium-low heat (225–275°F). Place pork over indirect heat with a drip pan containing 1 cup apple juice/beer. Close lid and cook 4–6 hours until fork-tender, spritzing occasionally with the liquid to maintain moisture. For ribs/chicken, adjust times: ribs 3–4 hours, chicken thighs 35–45 minutes depending on size and grill temp.

Baste with Mesquite BBQ sauce

During the last 20–30 minutes of cooking (when meat is nearly done), brush generous coats of the mesquite BBQ sauce over the meat every 5–7 minutes to build a glossy, sticky glaze. If using butter, melt 2 tbs and brush a light layer over the sauce on the final baste for extra shine and richness.

Rest and serve

Remove the meat from the heat and tent loosely with foil. Rest 15–20 minutes (for large cuts) to allow juices to redistribute. Slice or pull the pork and serve with additional warm mesquite BBQ sauce on the side. Garnish with 2 tbs chopped fresh cilantro or parsley.
