Preheat

Place oven rack in the lowest position and preheat oven to 500°F (260°C). If using a pizza stone, place it on the rack before preheating. Allow at least 30 minutes for full heat.

Lightly dust a work surface with 1/4 cup flour. Stretch or roll the pizza dough into a 14-inch round, leaving a slightly thicker rim for the crust. Transfer dough to a lightly oiled pizza peel or an inverted baking sheet if not using a peel.

Brush the outer 1/2-inch rim lightly with 1 tablespoon olive oil to promote browning.

Sauce & cheese

Spread 1 cup of Guy's pizza sauce evenly over the stretched dough, leaving the oiled rim exposed (about 1/2 inch). Use the back of a spoon to distribute the sauce in a thin, even layer.

Sprinkle 3 cups shredded mozzarella evenly over the sauce, leaving a little space at the edge. Lightly sprinkle 1/4 cup grated Parmesan over the mozzarella.

Prepare sausage

In a medium skillet over medium heat, add the crumbled Scimeca's Italian sausage (8 oz). Cook, breaking up with a spatula, until browned and cooked through, about 6–8 minutes. If the sausage releases a lot of fat, drain to leave about 1 tablespoon in the pan for flavor.

Evenly distribute the cooked sausage over the cheese layer.

Scatter 20 slices of pepperoni across the pizza, spacing them evenly so each slice overlaps slightly with cheese and sausage.

Sprinkle the chopped, crisp-cooked bacon (4 slices worth) evenly across the pizza.

Sauté mushrooms & onions (optional)

If you prefer a less watery topping and more flavor, in the same skillet used for sausage, add the sliced mushrooms (1 cup) and sliced onion (1/2 cup) with a pinch of salt (1/8 tsp). Cook over medium-high heat for 3–4 minutes until softened and any released liquid has mostly evaporated. Remove from heat and spread over the pizza.

Distribute the thinly sliced green pepper (1/2 cup) evenly over the pizza.

Scatter 1/4 cup sliced black olives over the toppings.

Finishes & seasoning

Lightly sprinkle 1 teaspoon dried oregano, 1/4 teaspoon crushed red pepper flakes (more to taste), and 1/4 teaspoon freshly ground black pepper over the assembled pizza.

If using a pizza stone, slide the pizza onto the preheated stone (or place the baking sheet with the pizza into the oven). Bake at 500°F (260°C) for 8–12 minutes, rotating once halfway, until crust is deeply golden and cheese is bubbling and beginning to brown. Baking time will vary by oven and stone; watch closely after 8 minutes.

Remove the pizza from the oven and let rest for 2–3 minutes. Slice into 8 pieces and serve hot.
