Sandwich assembly
Season vegetables
Pat tomato slices dry with paper towel. Lightly sprinkle tomato slices with about 1/8 tsp salt and a pinch (about 1/8 tsp) black pepper to bring out flavor.
Spread mayo
Spread 1 tablespoon mayonnaise on one side of the bottom slice of bread and 1 tablespoon on one side of the top slice of bread (or all on the two outside faces of the stacked 3-slice sandwich).
Layer meats and cheese
On the bottom slice (mayo side up), layer the meats: first place 4 slices turkey evenly, then 4 slices ham, then 4 slices roast beef slightly overlapping to cover. Top meats with 2 slices cheddar cheese to help bind layers.
Add vegetables and bacon
Place 2 lettuce leaves over the cheese, then arrange 4 tomato slices and 4 onion rings evenly. Break the cooked bacon slices in half if needed and lay over the tomato and onion so the bacon is distributed across the sandwich.
Finish and press
Place the top slice of bread (mayo side down) on top. If using three slices of bread (a true club), build as follows: bottom slice (mayo up) + first stack of meats/cheese, middle bread slice (mayo up) + second stack if making double-decker, top bread slice (mayo down). For this recipe using 3 slices: after first stack place middle bread slice mayo side up, add remaining turkey/ham/roast beef and bacon/cheese/veg as desired, then top with final slice. Press gently to compact.
Cut and serve
Secure sandwich with toothpicks if tall, cut diagonally into halves or quarters. Serve immediately while bacon is warm and bread is fresh. Makes 1 large club sandwich (or share as 2 smaller portions).
