Preparation
Trim and wash
Trim off the root ends and any wilted tips from 12 stalks of green onions. Rinse thoroughly under cold water to remove grit, then pat dry with paper towels. Reserve both the white and green parts; slice stalks in half lengthwise if thicker than 1/2 inch to ensure even cooking.
Mince garlic and parsley
Mince 2 cloves of garlic finely. Chop 2 tablespoons fresh parsley if using. Set aside.
Cooking
Heat pan
Place a large skillet over medium heat. Add 2 tablespoons unsalted butter and 1 tablespoon olive oil. Allow the butter to melt and foam but not brown (about 1 minute). The oil helps prevent the butter from burning.
Cook green onions
Add the prepared green onions in a single layer. If they are long, arrange so whites and greens cook evenly. Cook undisturbed for 1–2 minutes to develop a light char on the undersides, then toss or flip and continue cooking for another 2–3 minutes until the whites are tender and the greens are wilted but still bright. Total cooking time about 4–6 minutes depending on thickness.
Season and finish
Season with 1 teaspoon sea salt, 1 teaspoon freshly ground black pepper and 1 teaspoon red pepper flakes. Stir to combine. Remove the pan from heat, squeeze 1 teaspoon fresh lemon juice over the green onions and toss. Taste and adjust seasoning. If using, stir in the chopped parsley for freshness.
