Prepare vegetables
Wash all vegetables. Peel carrots and daikon. Cut carrots into 1/8–1/4" thick sticks or rounds. Slice daikon into 1/8" half-moons. Halve the cucumber lengthwise, scoop seeds if watery, and slice into 1/4" half-moons. Thinly slice red bell pepper and red onion. Cut cauliflower into small florets. Aim for uniform size so vegetables pickle evenly.
Place the prepared vegetables in a large bowl. If you prefer a slightly crisper texture, sprinkle 1/2 teaspoon kosher salt over the vegetables, toss, and let sit 10 minutes, then drain and pat dry before packing.
Pickling Spice
Make spice blend (if using)
If using the loose pickling spice, lightly crush the mustard, coriander, and peppercorns in a mortar and pestle or with the bottom of a heavy pan to release oils. Combine with red pepper flakes and crumbled bay leaf. This step is optional if you prefer to use 1 teaspoon of pre-mixed pickling spice.

Prepare brine
In a small saucepan combine 1 cup water, 1 cup white or rice vinegar, 3 tablespoons sugar, and 1 tablespoon kosher salt. Add 1 teaspoon pickling spice or the homemade spice blend. Bring the mixture to a simmer over medium heat, stirring until sugar and salt dissolve, about 3–4 minutes. Remove from heat and let cool 5 minutes.
Taste the brine (careful, it's hot). Adjust sweetness or acidity if desired: add up to 1 tablespoon more sugar for sweeter, or 1–2 tablespoons more vinegar for tangier. Let the brine cool to warm (not boiling) before pouring over vegetables to avoid overcooking them; for a quick refrigerator pickle you can pour while still warm so it penetrates faster.
Assembly
Pack jars
Sterilize two 16-ounce (500 ml) jars or one 32-ounce jar by washing with hot soapy water and rinsing. Pack the prepared vegetables tightly but without crushing into the jars, leaving about 1/2" headspace. Tuck smashed garlic cloves, dill sprigs (or cilantro), and red chili slices among the vegetables in each jar for flavor.
Pour the warm brine over the packed vegetables, ensuring all pieces are submerged. Use a spoon or small spatula to release any trapped air bubbles and top off with additional brine (use equal parts water and vinegar if needed) so vegetables remain covered. Wipe rims clean and seal with lids.
Finishing & Storage
Let jars cool to room temperature, then refrigerate. Quick pickles will be ready to eat after 4–8 hours, but flavor improves after 24–48 hours. Keep refrigerated and use within 4–6 weeks for best texture and flavor.
For longer shelf-stable storage (not required), follow a proper water-bath canning process with sterilized jars and process times appropriate for your altitude and jar size. This recipe as written is intended for refrigerator pickling.
