Braised Oxtail

In a large pot, heat olive oil over medium heat. Season the oxtail pieces with salt and pepper, then sear them until browned on all sides. Remove the oxtail and set aside. In the same pot, add chopped onion and minced garlic, sautéing until translucent. Return the oxtail to the pot, add beef broth, and bring to a simmer. Cover and cook on low heat for about 2-3 hours, or until the meat is tender and falling off the bone. Remove the oxtail, shred the meat, and set aside. Strain the broth and save for sauce.

Fried Gnocchi

Bring a pot of salted water to a boil and cook the gnocchi until they float to the surface. Drain and set aside. In a skillet, melt butter over medium-high heat. Fry the boiled gnocchi in batches until golden and crispy on all sides. Remove from skillet and drain on paper towels.

Assembling the Poutine

On a large serving plate, layer the crispy gnocchi, shredded braised oxtail, and scatter cheese curds over the top. Drizzle with some of the reserved broth for added flavor. Garnish with chopped parsley and serve immediately.
