Salsa Potatoes

Sauté vegetables and crisp potatoes
Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering. Add the par-cooked, drained potatoes in a single layer. Let them cook, undisturbed, 4–5 minutes until bottoms are golden and crisp. Toss or flip and continue cooking another 4 minutes to brown more sides.

Add salsa components
Push potatoes to one side of the skillet. Add the chopped onion and jalapeño to the empty space and cook 2–3 minutes until softened. Stir in the minced garlic, diced tomato, 1/2 teaspoon ground cumin, 1/2 teaspoon smoked paprika and 1 teaspoon kosher salt. Stir everything together and cook 1–2 minutes more so flavors meld. Remove from heat, stir in 1 tablespoon lime juice and 2 tablespoons chopped cilantro. Keep warm.
Queso Amarillo

Make cheese slurry
In a small bowl, whisk 1 teaspoon cornstarch into 1/2 cup cold whole milk until dissolved.

Cook queso
In a small saucepan over low heat melt 1 tablespoon butter. Add the milk-cornstarch mixture and warm gently, stirring until it starts to thicken slightly, about 1–2 minutes. Gradually add the grated yellow cheddar and monterey jack in small handfuls, stirring constantly until smooth and melted. Stir in 1/4 teaspoon onion powder, 1/8 teaspoon pepper and chopped pickled jalapeño if using. Keep the queso on the lowest heat, stirring occasionally, until ready to serve.

Cook hot dogs (optional grill or pan)
Heat 1 tablespoon vegetable oil in a separate skillet over medium-high heat. Score hot dogs lengthwise lightly (optional) and add to the pan. Cook, turning occasionally, until browned on all sides, about 5–7 minutes. Transfer to a plate and keep warm.

Fry eggs
In the same skillet used for hot dogs, reduce heat to medium and add 1 tablespoon unsalted butter. Crack 4 eggs into the pan and cook to your preference: sunny-side up 2–3 minutes until whites set, or 3–4 minutes and flip for over-easy. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Remove from heat when done.

Assemble
Arrange hot dogs and eggs on individual plates. Spoon a generous portion of salsa potatoes to the side. Drizzle warm queso amarillo over the hot dogs (or serve in a small bowl for dipping). Garnish with chopped cilantro and green onions, and add hot sauce or extra salsa to taste.
